You can use the utmSetVar() function to add a visitor to the User Defined field in Google Analytics. Set the utmSetVar on each category page. This value will be overwritten with each new category page, so only the last category before they complete the checkout process will be counted for the conversion. If the checkout process is setup as a Goal you can gain the additional metrics the Goal reports provide.
